Spanish: Arroz Con Pollo - Chicken & Rice


Chicken & Rice or Rice & Chicken!
Who does not love this combination?

When a little just has to go the extra mile.
When visitors rock up unannounced.
When you are squeezed for time.

Nothing, oh, nothing will be as heartwarming, as this good old fashioned favourite…

Arroz Con Pollo – Chicken & Rice

3 T      Oil
1          Chicken, cut into pieces
1          Onion, large
1          Red Pepper, medium
1          Green Pepper, medium
1          Yellow Pepper, medium
3 t       Garlic
1          Dried Red Chilli
1 ½ C  Long Grain Rice, uncooked
2 C      Chicken Stock
1 Can    Tomatoes chopped (400 g)
1 Can    Tomato Paste (70 g)
1 ½ t   Salt
2 t       Garlic Pepper

  • Add ½ of your Oil to a large pot on medium heat.
  • Sprinkle ½ t of Salt on your Chicken pieces.
  • Add Chicken to your pot and brown.
  • Remove from your pot and set aside.
  • Slice your Onions.
  • Chop your Red, Green and Yellow Peppers.
  • Add the rest of your Oil to your pot, along with the Onions, Peppers, Dried Red Chilli and Garlic.
  • Simmer until soft. 5-7 minutes.
  • Add Rice and Salt. Stir through and fry for 2-3 minutes.
  • Add Chicken Stock, Canned Chopped Tomatoes, Tomato Paste, Garlic Pepper and browned Chicken pieces.
  • Stir through, cover with a lid and cook for 30-40 minutes.
  • Check & Stir every 10 minutes until your Rice and Chicken is soft and tender.
