Portuguese Chicken Livers


Chicken Livers are amongst the most versatile and budget friendly ingredients. 

We often see them as a starter on a menu at a restaurant but they are definitely worthy of being a main course. 

In this recipe they are cooked in a rich tomato sauce, until they are soft and creamy. There is just enough heat to make them hot and spicy.


Ingredients:

500g  Chicken Livers

2T    Oil

1      Onion

1      Dried Red Chilli

4      Fresh Garlic Cloves

3      Fresh Tomatoes

1pkt  Tomato Paste (50g)

1t       Crushed Black Pepper

1t      Paprika/Smoked Paprika

1t      Salt

1t      Sugar

1T      Lemon Juice


1. Rinse the Chicken Livers and snip them in half.

2. Peel and slice the Onion and Garlic Cloves.

3. Grate the Fresh Tomatoes.

4. Cut the Dried Red Chilli into smaller pieces with a kitchen scissors or knife.

5. Add the Oil, Dried Red Chilli sliced Onion and Garlic. into a pot and fry everything on medium heat, until it is lightly brown. +/- 3-5 minutes.

6. Add the Chicken Livers and fry everything on both sides. +/- 5 minutes

7. Add the grated Tomatoes, Tomato Paste, Sugar, Salt, Black Pepper, Smoked Paprika/Paprika and Lemon Juice. Stir through. Cover the pot with a lid and simmer on a lower heat for 20 to 30 minutes.

 
Enjoy it with a crispy Portuguese Roll, Bread, Rice or Mashed Potatoes.
